Purple corn is an ancient crop with a long history of cultivation in South America that goes back beyond the Incan civilization. It is can be considered a ‘Superfood’ because of its very high anthocyanin content. What does this mean exactly? Well, if you compare a cob of regular yellow corn and you place it side by side with a cob of Andean Purple Corn, you’ll notice that they look pretty much exactly the same – with one key difference. Yes, the color. However, the significance of this goes beyond mere aesthetics because it’s actually the amazing color of the corn itself that holds the key to so many of its incredible health benefits.

Anthocyanins are the pigments that produce the rich purple, blue or red colors in plants. C3G, is the name of the particular anthocyanin found in purple corn and research is showing that it is one of the most potent antioxidants discovered to date. Studies have shown that C3G not only helps to prevent cancer, but also fight cancerous cells by slowing their growth and in some cases, killing them off entirely. Other studies are revealing their ability to improve cardiovascular health and collagen regeneration, suppress inflammation, lower cholesterol, and fight obesity and diabetes.
